Das Projektes Phytamin soll die Forschung an pflanzlichen Proteinen/Eiweißen weiter vorantreiben. Wir wollen mit den Ergebnissen innovative Produkte entwickeln und zeitgleich in der Praxis auf Realisierbarkeit testen. Wir sind davon überzeugt, dass der Markt für Alternativen zum Fleisch stark wachsen wird. Die AOT verfügt durch die Produktion des Sonnenblumenproteins Heliaflor® schon über Wissen zu pflanzlichen Proteinen. Von diesem Punkt aus sollen natürliche, pflanzliche Proteine als Grundlage für die entstehenden Halbfertigprodukte, sowie ein Herstellungsprozess erarbeitet werden. Das Projekt basiert auf 3 Fundamenten die zeitgleich bearbeitet werden: 1. In Zusammenarbeit mit Universitäten und Fachhochschulen wird die Fragestellung bearbeitet, pflanzliche Proteine als Rohstoff (Konzentrat oder Isolat) zu gewinnen und an die Lebensmittelindustrie sowie Lebensmittelverarbeiter bereit zu stellen. Das Ergebniss wird auf wirtschaftliche Realisierbarkeit für eine industrielle Verarbeitung durch Verfahrenstechnik in der Region geprüft. Alle Produkte die daraus entstehen werden zunächst in Kleinanlagen erprobt. 2. Ergebnisse aus der Forschung werden direkt auf ihre Anwendungstauglichkeit in der Produktentwicklung der Metzler Molkerei getestet. 3. Um die Marktfähigkeit und das Marktpotential dieses Projektes sicherzustellen, wird zeitgleich eine Marktanalyse erstellt, sowie eine Strategie der Vermarktung entwickelt. Die Einsatzmöglichkeiten unserer Ergebnisse werden dadurch laufend geprüft und hinterfragt. Am Ende der 3 Jahre soll durch diese 3 Fundamente die Grundlage für Innovationen geschaffen sein.

The Phytamin project is designed to further explore plant protein research, and develop innovative products and at the same time test them for feasibility in practice, eg. as an alternative to meat. The project is based on 3 foundations that will be processed at the same time: 1. In collaboration with universities and technical colleges, the issue of extracting plant proteins as a raw material (concentrate or isolate) and making them available to the food industry and food processing companies is being investigated, the result of which is to be economically viable for an industrial sector le processing by process engineering in the region tested. All products resulting from this are first tested in small plants. 2. Results from research are tested directly for their suitability for use in product development at the Metzler dairy. 3. In order to ensure the marketability and market potential of this project, a market analysis and a marketing strategy will be developed at the same time. The application possibilities of our results are thereby constantly examined and questioned. At the end of the 3 years, these 3 foundations are to create the basis for innovation.

QualiMeat – Forschung für die beste Verpackung: Die Frage nach den Wechselwirkungen zwischen Fleisch und Verpackung und wie gut diese mit klassisch analytischen Methoden nachweisbar sind, beschäftigte die Partner des Interreg-Projekts “QualiMeat – Qualitätssicherung und Optimierung in der Verpackung von Fleisch” (AB116) in den vergangenen drei Jahren. Ende November lud das Konsortium alle Interessierten zur Ergebnispräsentation und Diskussion zum Thema Fleischverpackung in die Molkereischule nach Kempten. Die wissenschaftlichen Partner beeindruckten bereits auf den ersten Blick durch die Menge der gesammelten Daten: Eine Datenbank der Hochschule Kempten über Fleischverpackungssysteme mit 280 Datensätzen wurde erstellt und wird nun laufend aktualisiert. Neun Lagerungsversuche mit insgesamt 18 Bemusterungen zum Vergleich von Verpackungssystemen ergaben 25.000 Messpunkte der verpackten Fleischprodukte durch physiko-chemische Untersuchungsmethoden am MCI – Management Center Innsbruck und 26.000 gemessene Spektren als Daten der nicht-invasiven Messmethode der Universität Innsbruck. Die Herausforderung bestand aber wie immer in der Analyse und der Interpretation der Daten. Vor allem die biologische Variabilität von Fleisch machte es den Forscherinnen und Forschern nicht einfach, die Beeinflussung von Fleischqualität durch die Verpackung festzustellen. Mithilfe von Statistikmodellen und dem Abgleich der Untersuchungsmethoden konnten aus dem enormen Datensatz aber doch interessante Ergebnisse generiert werden. Die Wissenschaftler stellten im Vergleich keine Qualitätsunterschiede zwischen Fleisch fest, das in konventioneller MAP Verpackung und in MAP Verpackung aus Biomaterialien verpackt war, während zwischen den einzelnen Verpackungssystemen doch Unterschiede feststellbar waren. „Für die wissenschaftlichen Partner ist es unglaublich wichtig, Zugang zu realen Forschungsobjekten zu haben. Vor allem die Probenlogistik stellte uns in diesem Projekt vor große Herausforderungen, aber Dank dem Engagement aller Partner hat dies wunderbar funktioniert und wir konnten einen einzigartigen Satz an validen Daten generieren.“ (Katrin Bach vom MCI, Koordinatorin des Projekts) Die angeregte Podiumsdiskussion, geleitet von Gastgeber und Disseminationspartner ZLV zeigte dann, wieviel Forschungspotential in diesem Thema noch steckt, Nachhaltigkeit im Sinne von Ressourceneinsatz oder aber von Recycelbarkeit der Materialien, neue Trendmaterialien wie antimikrobiell beschichtete Folien, Verpackung für Großkunden, etc. Diese und andere Themen ergaben im ausklingenden Get-together noch viele Anregungen für weitere gemeinsame Projekte.

QualiMeat — Research for the best packaging: The Interreg project “QualiMeat — Quality Assurance and Optimisation in the Packaging of Meat” (AB116) dealt with the question of the interactions between meat and packaging and how well they can be proven using classical analytical methods. At the end of November, the consortium invited all interested parties to the results presentation and discussion on the topic of meat packaging to the dairy school in Kempten. At first glance, the scientific partners impressed with the amount of data collected: A database of the University of Applied Sciences Kempten on meat packaging systems with 280 data sets has been created and is now constantly updated. Nine storage experiments with a total of 18 samples for the comparison of packaging systems revealed 25,000 measurement points of the packaged meat products by physico-chemical testing methods at the MCI Management Center Innsbruck and 26,000 measured spectra as data from the non-invasive measurement method of the University of Innsbruck. However, as always, the challenge was the analysis and interpretation of the data. Above all, the biological variability of meat did not make it easy for researchers to determine the influence of meat quality through the packaging. With the help of statistical models and the comparison of the research methods, however, interesting results could be generated from the enormous data set. In comparison, the scientists found no difference in quality between meat packaged in conventional MAP packaging and in MAP packaging made of biomaterials, while differences between the individual packaging systems were noticeable. “For the scientific partners, it is incredibly important to have access to real research objects, especially sample logistics faced great challenges in this project, but thanks to the commitment of all partners, this has worked wonderfully and we have been able to generate a unique set of valid data.” (Katrin Bach from MCI, coordinator of the project) The lively panel discussion, led by host and dissemination partner ZLV, then showed how much research potential still exists in this topic, sustainability in terms of resource use or recyclability of the materials, new trend materials such as antimicrobial coated films, packaging for large customers, etc. These and other topics revealed many suggestions for further joint projects in the sounding get-together.
