“I need to know the history of what I eat, not only the price. I need to know where it comes form, the hands that farmed and produced it … the day food has lost its true value and its history, there will be no hope for the future.” Carlo Petrini, Slow Food President. The intangible cultural heritage of food is an enormous yet underestimated resource, gastronomy treasures the entire history of a territory and embodies how different cultures have merged over the centuries. It is largely used to promote tourism but hardly ever treated as a resource that can leverage environmental sustainability and social integration. Our objective is to improve the capacities of local actors to valorise the intangible heritage of food in a vision that integrates economic, environmental and social sustainability, increasing as a result their knowledge of the richness of the gastronomic heritage and the skills needed to valorise it creatively. Cities are a perfect laboratory where such a change can be successfully achieved: small enough to strongly influence the entrepreneurial and social scene but also large enough to serve as gateways to international markets. The project is founded on the “new-gastronomy” concept that Slow Food as a movement promotes, A multidisciplinary approach to food that recognizes the strong connections between plate, planet, and people. The project intends to build a transferable model capable to valorise traditional foods with their producers, the breeds and seeds, the traditional processing techniques, the folklore, the cultural landscape, the natural resources nurturing and connecting urban dwellers and rural communities, enhancing the common assets of food heritage in CE and leading to a new alliance among 5 CE heritage cities for the benefit of local administrators, civil society, small business in the food, hospitality and creative sector and citizens at large.

Achievements (EN):

"Identify, protect, valorise" are the SlowFood-CE three key words. The project connected public and private actors from five central European cities: Venice (Italy), Dubrovnik (Croatia), Brno (Czech Republic), Kecskemét (Hungary) and Krakow (Poland) by creating a replicable model that gives local and traditional food the value it deserves. Thus, the project contributed to increase the capacity of local actors to valorise the intangible heritage of food in line with a vision of integrated economic, environmental and social sustainability. After building a shared methodology for the identification and promotion of the cultural resources linked to food heritage, a specific pilot project was set up in each city in order to try out innovative solutions for the promotion of local gastronomy to citizens and tourists in different urban spaces. Finally, the lessons learned over three years of work have been condensed into a common strategy for the sustainable promotion of food heritage which represents a road map for institutions who want to follow a similar path to protect their gastronomic heritage. Expected Results (EN): R 3.2 Status of capacities of the public and private sector for the sustainable use of cultural heritage and resources achieved through transnational cooperation.

Expected Outputs (EN):

Gastronomy is largely used to promote tourism but hardly ever treated as a resource that can leverage environmental sustainability and social integration. The intended change resides in increasing the knowledge that CE actors have of their gastronomic heritage both from the point of view of its richness and of the skills needed to properly identify and valorise it creatively, linking it to sustainability principles. Cities are a perfect laboratory where such a change can be successfully achieved: small enough to strongly influence the entrepreneurial and social scene but also large enough to serve as gateways to new markets: 1.Capacity of public and private actors to use GCH for the creation of new jobs and for the enhancement of social integration and social responsibility is increased; 2. Awareness of traditional food origins and history, traditional processing and farming techniques, local value chains and other cultural distinctive elements is increased; 3.Networking and pooling of resources among public and private sector is improved and increased; 4.Transnational links between cultural heritage cities with a specific focus on the promotion of intangible cultural assets are expanded and strengthened; 5.Number of tools and tested solutions to protect and promote food cultural heritage sustainably made available to a broad range of stakeholders is increased; 6. Strategic policy framework is developed and shared outside the partnership.
