Description (EN):

DietaPYR2 creates environmental and territorial opportunities for sharing solutions to innovate in the beef chain, from the production to the consumption, with local Pyrenees beef breeds. DietaPYR2 is framed in the axis 1, since sets a platform of cooperation between research centres and associations of beef producers, butchers and restaurateurs to exchange knowledges and technologies related to the production, transformation and marketing of the beef meat. The Pyrenean region involved in the project will be: Aragon, Catalonia, Occitanie and Andorra. In addition to the tasks of management and communication, the project comprises three technical tasks: (1)innovation and technology transfer to the farms in order to improve management and productivity of pastoral systems; (2) value the meat by enhancing its nutritional potential and heart-healthy qualities, new cuts and ripening processes as well as the possibilities of marketing with this differentiating element; (3) network of environmental education on the particularities of the grazing of beef cattle linked to biodiversity and the Pyrenean mountain.

DietaPYR2 pone en valor estrategias territoriales de colaboración transfronteriza que impulsan innovaciones en la cadena de vacuno, desde la producción hasta el consumo, procedente de razas autóctonas de los Pirineos. Se enmarca en el eje 1, ya que establece una plataforma de cooperación entre centros de I+D+I y PYMES (asociaciones de ganaderos, carniceros y hosteleros) que permita el intercambio de conocimientos y tecnologías relacionadas con la producción, transformación y comercialización de la carne. Las zonas fronterizas involucradas en el proyecto serán: Aragón, Cataluña, Occitanie y Andorra. El proyecto DietaPYR2, además de las acciones propias de gestión y comunicación que permitirán difundir los resultados a gran escala, se articula en tres acciones técnicas: 1) Transferencia de innovaciones y tecnologías a las ganaderías para mejorar la gestión y productividad de los sistemas pastorales; 2) Valorización de la carne de vacuno producida potenciando sus posibles cualidades nutritivas y cardiosaludables, nuevos despieces y procesos de maduración, así como las posibilidades de su comercialización con este elemento diferenciador; 3) Red de educación ambiental sobre las particularidades de la actividad ganadera de vacuno de carne ligada a la biodiversidad y a la montaña pirenaica

DietaPYR2 met en valeur les stratégies territoriales transfrontalières sources d'innovations dans la filière viande bovine, depuis la production jusqu’à la consommation, à partir des systèmes durables basés sur les races locales des Pyrénées. Il s’inscrit dans l'axe 1, car il établit une plateforme de coopération entre des centres d’Innovation, de Recherche et de Développement et des associations d'éleveurs, des bouchers et des restaurateurs pour permettre l'échange de connaissances et de technologies en lien avec la production, la transformation et la commercialisation de viande. Les zones frontalières impliquées dans le projet seront : l’Aragon, la Catalogne, l’Occitanie et l’Andorre. Le projet DietaPYR2, en plus des actions spécifiques de gestion et de la communication qui permettront de diffuser les résultats des actions propres à une grande échelle, s’articule en trois actions techniques complémentaires: 1) Transfert des innovations et des technologies aux élevages pour améliorer leur gestion et leur productivité 2) Mise en valeur de la viande bovine produite en travaillant sur ses potentielles qualités nutritionnelles et ses bénéfices pour la santé cardio-vasculaire, sur des nouvelles découpes et techniques de maturation, ainsi que sur les possibilités de commercialisation avec cet élément de différenciation 3) Mise en place d’un réseau d'éducation environnementale sur les particularités de l’activité d’élevage bovin liée à la biodiversité et à la montagne pyrénéenne.
