For thousands of years traditional food has played a main role in the traditions and folklore of the Programme area countries, being a basic part of their cultural heritage. Food and culture are particularly important in this area where traditions, cultural heritage, gastronomy and hospitality are inextricably intertwined. Local cuisine and products are among the factors that can spur innovation and promotion and ultimately ensure development at the regional and global level. Above all, they can enhance the tourist offer even further. The main objective of the CUHaCHA project is, hence, to strengthen and preserve the identity of the common culinary heritage of the Programme area and contribute to the development of tourism. This objective will be achieved with 2 specific objectives: 1) establishment of the cross-border cooperation so to diversify and strengthen the tourism offer; 2) better management and promotion of the culinary heritage as part of the tourism offer. In order to reach the specific objectives, 4 outputs will be developed: 1) Common culinary heritage trails to strengthen and diversify the tourism offer; 2) Culinary heritage handbook and 3) Training of service providers to assure better management of the culinary heritage and 4) Culinary heritage showrooms to promote the culinary heritage of the area. The main target groups benefiting from the implementation of the project will be general public, public authorities, service providers and other tourism, development and economy stakeholders of the area. Despite the potentials of the Programme area’s culinary heritage, there have been no transnational projects linking it with the tourism offer. Several existing initiatives are scattered across a wide area and developed mainly on a local level. Through cross-border cooperation this Project will achieve a wider objective and create a unique joint culinary heritage trail while strengthening the tourism offer of all three countries of the area.

Expected Results (EN): Increase in arrivals of non-residents staying in hotels and similar establishments

Expected Outputs (EN):

According to the World Tourism Organization’s “Global Report on Food Tourism” (2012.) food tourism has gained increasing attention over the past years and tourists are attracted to local products and flavours. This is especially important for rural communities due to their proximity to food-producing lands. They often enjoy a comparative advantage when it comes to serving up traditional fare. Food tourism allows them to generate income and employment opportunities locally while fuelling other sectors of the local economy such as agriculture. The main outputs of the project CUHaCHA (new tourism offer based on culinary heritage developed and promoted and service providers trained to maintain the quality of the culinary heritage within the cooperation area) will strengthen the networking and capacities of the culinary heritage based service providers which are mainly located in rural parts of the programme area. Hence, the outputs of the project will contribute to the main project result which is the increase of arrivals of non-residents visiting rural destinations in the partners’ regions. As per the statistical data, number of arrivals of non-residents visiting rural households in Zadar County in 2017 was 825.343; while the arrivals in Boka Bay are estimated on 329.159 and in Herzegovina-Neretva Canton estimated on 193.252 arrivals. Due to the fact that the cuisine of the destination is an aspect of utmost importance in the quality of the holiday experience and that rural tourism perfectly suits the trend of European travellers seeking authentic, unique experiences and local lifestyles, it is expected that the outputs of the CUHaCHA project will contribute to its main result: an increase of 15% of arrivals of non-residents (domestic and foreign visitors) in the partners regions. The above mentioned data of arrivals were found in the statistical systems of the partner regions and the same approach will be adopted for the calculation of the target value, as well.
