L’obiettivo generale del progetto è rispondere all’esigenza comune espressa dagli operatori economici della filiera delle erbe aromatiche dell’area transfrontaliera che necessitano di aumentare la qualità e la salubrità delle loro produzioni. La domanda crescente da parte dei consumatori di prodotti naturali e tipici ha generato una consistente richiesta di piante aromatiche di qualità. Il mercato, in crescita regolare da una dozzina di anni, favorisce la valorizzazione della biodiversità locale e l’utilizzazione dei terreni agricoli nelle zone difficili e marginali, contribuendo allo sviluppo sostenibile e alla creazione di posti di lavoro nelle zone rurali.

L’objectif général du projet est de répondre à une exigence commune exprimée par les acteurs économiques de la filière des herbes aromatiques de la zone transfrontalière, qui ont le besoin d’améliorer la qualité et la salubrité de leurs productions.La demande croissante de la part des consommateurs des produits naturels et typiques a généré un besoin important de plantes aromatiques de qualité. Le marché en croissance régulière depuis une douzaine d’année, favorise la valorisation de la biodiversité locale et l’utilisation de terrains agricoles dans les zones difficiles et marginales, contribuant au développement durable et à la création de postes de travail en milieu rural.

The main objective of the project is to give an answer to a common exigence expressed by economical actors of the aromatic plants sector in the cross-border area, they have the need to increase the quality and the healthiness of their productions. The increasing request from customers of natural products and local, has generated an important need of aromatic plants of quality. The market, in constant growth since a dozen years, promote the valorisation of local biodiversity and the use of agricultural terrains in difficult areas, contributing to a sustainable development and to the creation of working places in rural area.

Expected Results (IT):

Le piante aromatiche sono commercializzate principalmente essiccate e le fasi di lavorazione sono normalmente svolte dai produttori, singoli o associati, con tecnologie, basate su procedimenti termici che possono alterare la qualità organolettica e fisico- chimica delle piante, o non garantire una qualità batteriologica adeguata. Con la sperimentazione e la messa a punto di tecniche innovative di trasformazione e confezionamento delle erbe aromatiche, il progetto intende rispondere all’esigenza comune espressa dagli operatori economici della filiera delle erbe aromatiche dell’area transfrontaliera: aumentare la qualità e la salubrità delle produzioni e prolungarne la durata di conservazione. Le principali attività del progetto sono: • Applicare un nuovo sistema di essiccazione a freddo. • Impiegare i sottoprodotti (acque costituzionali). • Adottare tecniche innovative di sanitizzazione e verificare le caratteristiche della materia prima. • Studiare nuovi tipi di imballaggi biodegradabili per mantenere le caratteristiche del prodotto durante la shelf life. • Diffondere i risultati delle sperimentazioni ai produttori e alle imprese della filiera delle piante aromatiche. • Fare formazione sulle tecniche ottimizzate di essiccazione, sanitizzazione e confezionamento. Tra le diverse attività è prevista l’installazione di un laboratorio di essiccazione all’avanguardia, presso il MÚSES Accademia Europea delle Essenze, a Savigliano e che sarà messo a disposizione delle aziende di tutto il territorio.

Les plantes aromatiques sont en majorité commercialisées séchées et les phases de traitement sont en général effectuées par les producteurs, individuellement ou en association, avec des techniques basées sur des procédés thermiques qui peuvent altérer les propriétés organoleptiques, physiques et chimiques des plantes, ou ne garantissant pas une qualité bactériologique suffisante. Avec les expérimentations et la mise au point de techniques innovantes de transformation et de conditionnement des herbes aromatiques, le projet entend répondre aux besoins exprimés par les acteurs de la filière des herbes aromatiques de la zone transfrontalière : augmenter la qualité, le respect des normes sanitaires des productions et en prolonger la durée de conservation. Les principales activités du projet sont : • Appliquer un nouveau système de séchage à froid. • Recourir à des produits dérivés. • Adopter des techniques innovantes de stérilisation et vérifier les caractéristiques des matières premières. • Etudier de nouveaux types d’emballages biodégradables pour conserver les propriétés durant toute la vie du produit. • Diffuser les résultats des expérimentations auprès des producteurs et des entreprises de la filière des plantes aromatiques. • Faire des formations sur les techniques de séchage, de stérilisation et de conditionnement optimisées. Parmi les différentes activités est prévue l’installation d’un laboratoire de séchage de pointe, au MUSES, Accademia Europea delle Essenze, à Savigliano, qui sera mis à disposition des entreprises de tout le territoire.

Expected Results (EN):

Aromatic plants are in majority commercialised dried and phases f treatment are, in general, effected by producers, individually or in group, with techniques based on thermic process which could alliterate the organoleptic proprieties, physique and chemical of plants, or without guarantees of a sufficient bacteriological quality. With experimentations and the development of innovative techniques of transformation and containment of aromatic plants, the project would like to respond to needs expressed by actors of the sectors: increase quality, respect sanitary norms of production and prolongate the conservation tie. Main activities of the project are: • Apply a new system of cold drying. • Use derived products. • Adopt innovative techniques of sterilisation and verify characteristics of raw material . • Study new kind of biodegradable wrapping to conserve properties during the life of the product. • Diffuse results of experimentations to producers and industries of the aromatic plants sectors. • Do formations and techniques of drying, of sterilisation and of containment optimised. Within these different activities, the installation of a laboratory of drying is prevent, at MUSES, Accademia Europea delle Essenza at Savigliano which will be provided to industries of the whole territory.
