With a focus on meat quality, the project wants demand-driven innovation for higher quality beef and lamb meat to contribute to the development of the meat industry. Their goal is to simplify for consumers and buyers to get good beef and lamb with specific qualities, as well as create models that give producers pay based on the quality they deliver. The starting point of the project is that the meat industry is largely driven by what is produced. The project therefore wants to support the industry to increasingly rely on the market’s wishes. Here are opportunities such as choosing meat of specific eating quality and ethical quality high on the wish list. Our starting point is that in the future we will eat less meat, but we will eat higher-quality meat. “Both in terms of eating quality of the meat and ethical quality, we will also eat more meat produced in our own country,” says Kristina Anderback, former project manager. Supporting the industry in the change: The project is based on a pre-project where the industry’s view on how we can raise the quality and willingness to pay for beef and lamb. This work has now resulted in a number of efforts to make the meat industry more demand driven. The project will, among other things, help producers to find new tools and working methods to develop specific qualities of meat. It involves factors such as feed, genetics and the slaughter process. The project also works against the slaughter companies to support them in finding a new pricing model where the meat quality affects the payment to the producer. A further effort is to increase the knowledge of meat quality among consumers and shop staff for more informed choices. We have very good conditions for sustainable meat production in our regions, but to make production economically sustainable for producers, efforts are needed to achieve a more even quality and a higher selection of different qualities. Cooperation between countries strengthens the work: Denmark devotes considerable resources to research in the agricultural and food sector, which the Swedish partners can benefit from. In Sweden, the ethical aspects and animal welfare have been advanced, where Danish actors can learn from the experiences of the Swedes. By sharing knowledge and experience, the project aims to solve the problems surrounding pricing and meat quality in both countries. In addition, knowledge exchange will take place with a Norwegian party regarding the production of lamb meat. — There is a high level of confidence in the ethical quality of Swedish meat. However, a better selection is required based on eating quality. If you go to the meat counter in a store today, it’s hard to know what the quality of the meat you buy. More Conscious Consumption and Production: By developing concepts and tools that work, the project hopes that breeders and slaughterhouses can continue to produce a higher quality of meat even after the end of the project. The project also hopes that new pricing strategies will be implemented. Similarly, the knowledge of sustainable meat and meat quality is increasing among consumers and shop staff. — In the end, everything should lead to a more demand driven and thus more profitable meat industry. “We have a lot to gain from strengthened Scandinavian cooperation for development, implementation and best practice,” says Kristina Anderback.

Med fokus på köttkvalité vill projektet Efterfrågedriven innovation för högre kvalitet på nöt- och lammkött bidra till att köttbranschen utvecklas. Deras mål är att förenkla för konsumenter och inköpare att få tag på bra nöt- och lammkött med specifika kvalitéer, samt skapa modeller som ger producenter betalt utifrån den kvalitet som de levererar. Projektets utgångspunkt är att köttbranschen i för stor utsträckning drivs av vad som produceras. Projektet vill därför stödja branschen att i ökad utsträckning istället utgå ifrån marknadens önskemål. Här står möjligheter som att välja kött av specifik ätkvalitet och etisk kvalitet högt på önskelistan. – Vår utgångspunkt är att vi i framtiden kommer att äta mindre kött, men vi kommer att äta kött av högre kvalitet. Både sett till ätkvalité på köttet och etisk kvalitet, men vi kommer också att äta mer kött som är producerat i det egna landet, säger Kristina Anderback, tidigare projektledare. Stöttar branschen i förändringen: Projektet bottnar i ett förprojekt då man fångade upp branschens syn på hur vi kan lyfta kvaliteten och betalningsviljan för nöt- och lammkött. Det arbetet har nu mynnat ut i ett antal insatser för att göra köttindustrin mer efterfrågedriven. Projektet ska bland annat hjälpa producenter att hitta nya verktyg och arbetssätt för att få fram särskilda kvalitéer på kött. Det involverar faktorer såsom foder, genetik och slaktprocessen. Projektet arbetar även mot slaktföretagen för att stötta dem i att hitta en ny prissättningsmodell där köttkvalitén i högre grad påverkar betalningen till producenten. Ytterligare en insats är att öka kunskapen om köttkvalitet hos konsumenter och butikspersonal för fler medvetna val. – Vi har mycket bra förutsättningar för hållbar köttproduktion i våra regioner, men för att göra produktionen ekonomiskt hållbar för producenterna så behövs insatser för att få en jämnare kvalitet och en högre selektering av olika kvaliteter. Samarbete mellan länder stärker arbetet: Danmark lägger stora resurser på forskning inom lantbruks- och livsmedelsektorn, vilket de svenska partnerna kan dra nytta av. I Sverige har man kommit längre gällande de etiska aspekterna och djurvälfärden, där de danska aktörerna kan lära av svenskarnas erfarenheter. Genom att dela kunskap och erfarenheter vill projektet lösa den problematik som finns kring prissättning och köttkvalitet i de båda länderna. Dessutom kommer kunskapsutbyte att ske med en en norsk part gällande produktion av lammkött. – Det finns ett högt förtroende för den etiska kvaliteten hos svenskt kött. Dock efterfrågas en bättre selektering utifrån ätkvalité. Går du till köttdisken i en butik idag så är det svårt att veta vad det är för kvalitet på det kött som du köper. Mer medveten konsumtion och produktion: Genom att ta fram koncept och verktyg som fungerar hoppas projektet att uppfödare och slakterier kan fortsätta att producera en högre kvalitet på kött även efter projektets slut. Projektet hoppas också att nya prissättningsstrategier implementeras. Likaså att kunskapen om hållbart kött och köttkvalitet ökar hos konsumenter och butikspersonal. – I slutändan ska allt leda till att vi får en mer efterfrågedriven och därmed mer lönsam köttbransch. Vi har mycket att vinna på ett stärkt skandinaviskt samarbete för utveckling, implementering och best practice, säger Kristina Anderback.
